We like to work with other food producers, so here are a few recipes using their produce

Liberty Fields Salad

A lovely versatile salad. You can vary the ingredients – use toasted almonds, walnuts sunflower seeds instead of pine nuts, or peas instead of green beans

200 grams – green beans trimmed, 
1 bunch of asparagus
100 grams – feta cheese, 
1 tablespoon pinenuts
Liberty Fields Apple Balsamic Vinegar

Preheat oven to 180°C/160°C fan. Place pine nuts on a baking tray. Bake for 4 to 5 minutes or until golden (you can skip this step and use unroasted pine nuts).


Meanwhile, cook beans and asparagus in a saucepan of boiling water for 2 minutes or until just tender. Drain. Refresh under cold water. Place green beans and asparagus in a large bowl. Drizzle with Liberty Fields Apple Balsamic and sprinkle with pine nuts and crumbled feta cheese.

Liberty Fields Apple Fool

A delicious Apple Fool, and perfect as a light, fresh dessert. Adapt this recipe to your personal taste – there are no hard and fast rules! You can use any type of fruit puree, or leave out the nuts if you can’t eat them. 

Bramley apples
Liberty Fields Apple Syrup
Yoghurt
Mango puree
Almonds
Pinenuts
Figs
Caramelised apple
Caramelised almond and pine nuts

Peel, chop and then cook the apples over a low heat with a bit of water and sugar to taste, then puree and allow to cool.

Meanwhile caramelise the almonds and pine nuts in Liberty Fields Apple Syrup to make a toffee crisp. Caramelise some cubes of apple separately. To caramelise, melt some butter in a pan, add some syrup, then the almond and pine nuts. Do the same with the cubes of apples.


Build in layers of apple puree, Woodlands Dairy yoghurt, Liberty Fields Apple syrup, mango puree and top with the pine nuts and almonds and caramelised apples. 

Serve with fresh figs
